69. Wheat Free Flours
I went to an Italian restaurant a few months ago and when I told the chef I had a wheat intolerance, he made up fresh pasta from ‘wheat free flour’ He used his own blend of rye, corn and millet flour and it was no trouble to him at all. I was so impressed that he was this accomodating.
What I didn’t know was, just how many wheat free flours there are. I’ve listed some here, although not all are gluten free as well. I can eat gluten. A lot are not suitable for making bread.
